Vegan Butterscotch Pudding

Vegan Butterscotch Pudding Recipe

I love butterscotch pudding; unfortunately, the only way I have ever made it is from a package.  So, I knew I needed to start experimenting.  Once I located the butterscotch flavoring, I realized I would be able to create a delicious pudding.  In this recipe, I used almond milk.  If you prefer a sweeter pudding, you can just add more dates or maple syrup. I hope you enjoy!

1 container firm tofu

1 tsp natural butterscotch flavoring by OliveNation (Organic Complaint)

6 dates soaked (pit removed)

1/2 c plant milk

1/4 c maple syrup

dairy free chocolate chips shaved for topping

 

Place first 5 ingredients in blender.  Mix until smooth and creamy.  Mixture will setup in refrigerator after a couple of hours. Then place shavings on top.
