This is a simple recipe. I use this recipe all year long and use different cookie cutters for the season.
1 c All purpose unbleached flour
1 c Organic sprouted spelt flour
1 1/2 tbsp Baking Powder
2 tsp Coconut sugar
1/2 tsp Cream of Tartar
1/2 c Vegan Earth Balance butter
2/3 c Plant Milk
Place all dry ingredients in a stand mixer and mix for a few seconds. Put in butter and mix. Once mixture resembles crumbles, stop. Then slowly add the milk. Place dough on floured surface. Roll out to 1/2 inch. Cut with cookie cutter of your choice. Bake at 400 degrees for 8 minutes or until golden brown.
Serve with your favorite jam, jelly or honey.
