Instant Pot Hot Fudge Cake

When I asked my daughter what dessert she wanted for New Year’s Eve, she immediately said “Hot Fudge Cake”.  We made it together.  It is so delicious..even better than a warm brownie.


Instant Pot Hot Fudge Cake

1 3/4 cups organic coconut sugar
1 c organic sprouted spelt flour
3 Tbsp plus 1/4 cup of unsweetened cocoa
1 1/2 tsp aluminum free baking powder
Scant amount of salt
1/2 cup plant based milk
2 Tbsp vegan butter melted
1/2 tsp vanilla
1 3/4 cups boiling water

In a medium mixing bowl mix together 1 cup coconut sugar, flour, 3 tbsp cocoa, baking powder and salt.

Stir in milk, butter and vanilla

Pour batter into Instant Pot

Using first bowl, mix together 3/4 cup coconut sugar and 1/4 cup cocoa. Sprinkle this mixture over the batter in the Instant Pot.

Next pour boiling water over mixture. Do not mix.

Cover and cook in Instant Pot for approximately 2 hours on “SLOW COOKER” setting. When finished cooking, it will be very gooey.. Delicious!
