Whenever I am running errands with my daughter, she gets hungry. I do not want to stop for fast food. So, this is a good option. I keep them in the freezer in a ziploc bag.
Chocolate Chip Pecan Granola Bars
1/4 coconut butter or peanut butter
1/2 cup brown rice syrup
1 Sprinkle of cinnamon
Scant amount of salt
1 tsp organic vanilla
1 cup of rolled oats
1 1/2 cups of rice cereal *
3 plus tbsp of nondairy chocolate chips
1/4 chopped pecans
First, prepare a 8 x 8 pan with parchment paper
Then in a medium saucepan place coconut butter, brown rice syrup, cinnamon, salt and vanilla. Stir on medium heat until everything is melted and mixed well.
Next, add the rolled oats and cereal. Stir till oats and cereal are well coated.
Put prepared mixture in the 8 x 8 pan. Press down with spatula.
Lastly, when bars have cooled for a few minutes, press chocolate chips and pecans on top. Then score with knife. When completely cooled, slide the bars out of pan and place on cutting board. Then cut into eight bars. I keep them in freezer.
*For fun I decided to use a different cereal. It was plant based and contained pecans. You can be creative and add a variety of different dried fruits or nuts.
