Vegan Fruit Crisp

3 cups fruit of choice (I prefer blackberries and raspberries)

1/3 cup organic coconut sugar

1/2 c organic sprouted spelt flour

1/2 cup rolled oats

1/3 cup vegan butter

3/4 tsp cinnamon

Scant amount of salt

*Garnish with Rice milk whipped topping or coconut whip cream

Place fruit in a 8 X 8 baking dish. Combine sugar, flour, oats, butter, cinnamon and salt.  I found my KitchenAid mixer works well to incorporate the butter.  I love having this crisp for breakfast on the weekends.  It is like having pie for breakfast.  I am continually using different seasonal fruit for variety.
