Vegan Lemon Pudding


Raspberry Coulis

1 package of firm tofu

1 c soaked cashews

1/4 c maple syrup

1/2 tsp lemon zest

1/4 c plus 1 tbsp lemon juice

Raspberry Coulis

1 c raspberries

1 tbsp 100% pure maple syrup (more if you like sweeter)

In a blender, place all pudding ingredients making sure to drain all liquid from tofu.  Blend till nice and creamy.  Pour into container and let setup for several hours.

For the Raspberry Coulis, place raspberries and maple syrup in blender.  Blend till pureed.  Pour mixture through metal sieve.  This will allow you to have a seedless coulis.  Use this mixture for drizzling.
